Whether it’s Sunday lunch or a dinner to impress, dressed up or down, roast venison is a winner.  Brown the meat in a hot oven - 220 C for around 20 minutes - then reduce to 150 C and cook for 15 minutes per 500g (medium to well done). Try marinating your meat overnight, then roasting with rosemary over sweet roots.

Top tip: Don’t forget to rest your roast for around 30 minutes!
