A Passion to Inspire

Ardgay Game were delighted to attend ‘A Passion to Inspire’ at Murrayfield Stadium, Edinburgh in support of local student chefs from UHI North, West & Hebrides.

The event aimed to inspire young chefs through practical demonstrations from experienced and lauded chefs at the top of their game. The students from UHI were there to prepare their award-winning original dish made with Ardgay Game venison.

With the flavours and methods of Japanese cookery as their inspiration, the two students, Holly and Finlay, presented a Venison Tataki to the audience offering taster plates to all of the colleges present.

A cross between a Tartare and Ceviche, the Ardgay Game striploin had been marinated in oyster sauce and soy sauce for 5 hours, lightly pan-seared, and then cured in ponzu sauce.

Served with a cured egg yolk, the end result was a truly delicious dish showcasing the delicate texture and taste of the venison itself enhanced by wonderfully balanced Japanese-inspired flavours.
